Chia Chocolate Cookies

2 tablespoon Chia Seeds

1/3 cup Water

1 ¼ cup Wholemeal Flour

1 cup Vegan Choc Chips

½ cup Coconut Sugar 

1 vanilla bean seeds from the bean pod

½ tablespoon Baking Powder

Pinch of Salt


  1. Preheat oven to 180 C
  2. Soak the chia seeds in the water for 5 minutes
  3. Whisk the sugar and oil together until well combined. 
  4. Stir in the flour, backing powder and vanilla until mixed
  5. Fold in the chia seed mix and chocolate chips
  6. Roll the mixture into medium sized balls and place on a baking tray
  7. Cook for 10-15 minutes

Chia seeds are a little seeds packed with goodness. They contain protein, fibre, calcium, vitamin C, iron and potassium. It is recommended that one tablespoon of chia seeds is consumed each day to maximise these health benefits.  

As well as including them in our cooking, we can eat chia seeds by sprinkling it on our breakfast cereals, soups and salads as well as mixing it in your water bottle.
